I actually have some sort of a love/hate thing when it comes to foods that look all fancy-schmancy but in reality take about five minutes from start to finish. I like getting into the depths of some random, time-consuming recipe, the mise en place, the smells, the wooden spoons. I’m even okay with doing the dishes, though sometimes that can feel like a mountain that I am constantly trying to scale.
And yet! If you throw some minced onion, diced avocado, a drizzle of olive oil and an egg in a portobello cap and bake it at 350*F for about 10 minutes or until the yolk has cooked to your merry little enjoyment, you can look like a kitchen rockstar and only dirty a cutting board, a baking dish and a knife.
See? It’s a complicated sort of love.
